This is a staple meal in our house and gets eaten every week. If you want to increase the quantity for more people but don’t want to spend too much more money on mince then add extra mushrooms and onions.

Spicy bolognese
Ingredients: (serves 3-4)
1 tsp dried chilli seeds (less if you want it less fiery)
1 onion, chopped
1 pepper (any colour – red is good for contrast), roughly chopped
6-8 mushrooms, chopped roughly
400g lean beef mince
2 tins chopped tomatoes (c. 300g)
Directions:
- Heat some oil in a wok or large pan with the chilli seeds. When the oil is hot add the onion.
- Once the onion is starting to go soft, add the pepper and mushroom for a few minutes.
- Once the onion, pepper and mushrooms are looking soft and browned, add the mince and keep moving in the pan until the mince is thoroughly browned (you may need to add some oil just before adding the mince if the onion has used up all the oil).
- Reduce the heat and stir in the tins of tomatoes, adding in half a tin of water from rinsing the tins out.
- Reduce the heat and simmer until you want to serve – simmering for 20 mins reduces the sauce and increases the spiciness, but it is fine to eat within a couple of mins of finishing stage 4 if you are hungry!
We serve it on its own with broccoli and eat it with spoons, but if we have non-paleo friends to visit then we do them a small helping of brown rice on the side.
The lettuce leaves in the photo above are because I was in a cutting phase when I took the picture. Extra lettuce at dinner really convinces my mind I’m full up for the day and helps to get extra water into the system too. I wouldn’t usually have them though.
