After a couple of failed attempts I’ve finally found a really quick gammon recipe for the strapped-for-time cook.
This is super easy, will take seconds to prepare and ensures a tasty joint at the end of the day, although I wouldn’t recommend drinking the liquid that comes off the end because it tastes incredibly odd. And don’t put onions in with it (like I do with the mustard gammon) – they taste dreadful cooked in apple, as we found to our cost on one of the earlier attempts!

Paleo gammon in apple
Ingredients (serves 4):
1.25kg boned gammon joint (although a similar size joint with the bone would work too, you just won’t serve as many people with it)
1-2 litres apple juice
Directions:
- Remove all the wrapping from your joint and put it in your slow cooker.
- Pour over the apple juice until the joint is covered. I only need 1 litre because my slow cooker is narrow and deep, but if you have a shallow and wide slow cooker you might need 2-3 litres of apple juice.
- Cook on a low setting for 7-8 hours.
That’s it! How easy does that seem? Just cook a few vegetables to go with it and you’re done!
